Açai Jam

The Easiest AÇAI Chia Jam

 

Ingredients

1/4 Cup (40g) Chia Seeds

1/3 Cup (125ml) Filtered Water

1/2 Cup (40g) Frozen or Fresh Berries (we chose Blueberries)

1 Cup Açai Juice – thaw 200g frozen açai puree at room temperature

1 Tbsp Fresh Lemon Juice

1-2 Tbsp Coconut Blossom Nectar / sweetener of choice

 

 

Method

1. Combine chia seeds and water. Soak until water is absorbed and chia seeds have softened (up to 25 mins).

2. Add the blueberries to a small saucepan. Smash the berries with a fork to let the juice run and simmer on low heat. Add a dash of water to prevent sticking.

3. Add chia seeds, açai juice. Stir continuously.

4. Add lemon juice.

5. Taste and add sweetener as preferred. Stir stir stir until all combined and chia seeds are nice and plump.

6. Serve into a mason jar and cool at room temperature.

7. Store in the fridge for up to 1 week.
