No-bake, GF, Superfood Granola
So you got the best açai you could possibly find outside of the Brazilian Amazon (Boa Vida Açai) and now you want to make the best açai bowl you can dream of outside of Bali!
We all know no açai bowl is complete without an epic granola – preferably with a CRUNCH and a flavour that compliments the natural, delicious taste of açai.
Whilst in 2020 lockdown, we tasked ourselves with coming up with that EPIC granola, made without oats/grains that needed to be baked and as always, high nutritional value and low in sugar.
Glad to tell you guys we did itt! This is honestly one of the best granolas we’ve had with açai – in terms of nutrition and taste and ease of making it at home, nothing compares. We hope you enjoy!
We have the luxury of sourcing all organic local ingredients from where we are living in Brazil, so we’ve starred (*) these special superfoods and provided equivalent alternatives so anyone can make this simple, delicious and nutritious granola.
Makes 1 large mason jar
1.5 cups organic plain corn flakes
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/2 cup sesame seeds
*1/2 cup baru fruit pulp (or insert your favourite dried superfood here – goji, jujube)
*1/2 cup baru seeds (low fat, high protein super seeds from the Cerrado, Brazil. You could also use blanched almonds or unsalted peanuts)
1/4 cup Brazil nuts
*3 x dehydrated banana, sliced (can use dried fruit of choice – raisins, cranberries)
2 tbsp organic virgin coconut oil
2 tbsp coconut nectar (can use agave or honey)
In a large bowl, start wit adding the dry ingredients and then add coconut oil (you may want to melt beforehand)
Stir in coconut nectar or preferred sweetener and taste test. Add a pinch of salt if needed
Store in an air-tight mason jar for up to 2 weeks
